Specialists from the “Krasnodar Scientific Center for Animal Science and Veterinary” Medicine under the Ministry of Education and Science of Russia have bred a herd of cows whose milk does not cause negative reactions from the gastrointestinal tract. This is reported by gazeta.ru with reference to the Ministry of Education and Science.
Milk contains β-casein protein, which comes in two types: A1 and A2. They differ in only one amino acid, but it makes a big difference. Form A1, when digested, can form toxic substances that cause inflammation. According to WHO, 30% of people on Earth experience gastrointestinal problems after drinking type A1 milk.
Milk containing only β-casein A2 is easily digestible and has a beneficial effect on the body.
The content of A1- and A2-β-casein in milk depends on the genotype of the cow. New technology has made it possible to create a herd that produces exclusively A2 milk. In the Krasnodar Territory, the production of A2 type dairy products has already been established: yoghurt, sour cream, cheese and cottage cheese with a high casein content.
The type of milk can be quickly determined using a test system developed by scientists. It is easy to use and has a low cost.
“Genotyping one cow costs only 600 rubles. The research is available to most veterinary laboratories, as it requires only basic equipment: a centrifuge, a thermal cycler and an electrophoresis apparatus”, - explained the Ministry of Education and Science.
