A classic of the genre: seven world-famous cakes

Although the variety of forms and flavors of confectionery is constantly growing, some classic recipes have remained popular for decades.

Time-tested cakes not only satisfy the taste buds, but also give a feeling of nostalgia, reminiscent of fond childhood memories or family holidays.

“Napoleon”. This cake, named after the French emperor, appeared in Moscow in 1912. Confectioners created it for the 100th anniversary of the victory over Napoleon's army, giving it the shape of the famous cocked hat. There is also a romantic version of the origin of the cake, associated with Napoleon’s attempt to appease Josephine after his betrayal.

“Cheesecake”. It is believed that cheesecake was invented in the V century BC. According to one version, its creator was the doctor Aedzhimius from the island of Samos. According to another, the dessert came to Europe from the Middle East thanks to the Crusaders. Cheesecake was also known and loved in England. The first mention of a dish similar to cheesecake in Russia dates back to the XIII century. At that time, housewives prepared a cheese loaf, which can be considered the predecessor of the modern dessert.

“Red velvet” is a colorful American cake first mentioned in an 1872 cookbook. The dessert got its name due to its soft texture. Its characteristic red color was achieved by combining cocoa, vinegar and buttermilk.

“Bird's milk” is not just a dessert, but a real legend. Its history goes back to the 30s of the XX century, when candies with the same name were created.

But the real triumph was the creation of the “Bird's milk” cake. In 1978, the chef of the Moscow restaurant “Prague” Vladimir Guralnik, inspired by sweets, created a unique dessert.

It was based on egg whites, and gelatin was replaced by agar-agar. The result exceeded all expectations: the airy, tender and melt-in-the-mouth cake immediately fell in love with sweet tooths of all ages.

“Dobos” is a Hungarian chocolate and caramel cake. Created in 1885 by confectioner József Dobos for a national exhibition. A special feature of the cake was its long shelf life. The delicacy consists of 6 thin layers of sponge cake soaked in delicate chocolate cream.

“Pavlova” is a weightless meringue topped with delicate cream and fresh fruit.

Residents of New Zealand proudly claim that the recipe was created in 1926 especially for the famous ballerina Anna Pavlova, who visited their country on tour.

The Australians attribute the authorship to their compatriot, the chef, who created this masterpiece in 1935 in honor of the dancer’s birthday.

Chocolate almond cake “Esterhazy”. The recognizable decoration of the dessert in the form of a cobweb made of chocolate icing captivates at first sight.

The history of “Esterhazy” dates back to 1846 in Hungary. The skillful cook of Count Pal Antal Esterhazy created this masterpiece for his son’s birthday. The guests liked the dessert so much that it quickly gained popularity not only in Hungary, but also in Germany and Austria.
