For example, the Coffee Project barista talks about cappuccino this way: you need to drink it right away, when it’s hot. Cappuccino can be considered a full-fledged dessert, in which sugar is not required, since the sweetness of the drink is given by milk, besides, by adding sugar and stirring it, you disrupt the structure of the drink and contribute to the separation of milk foam, which should be glossy, elastic, homogeneous, ideally - no bubbles. It is not eaten with a spoon, but drunk along with a drink (as intended). A milk mustache is the key to success.
Also, Espresso is drunk in a few sips, immediately after preparation. The glass of water served with espresso is drunk before, not after, coffee. This is done to cleanse taste buds and maintain water balance in the body, explains the specialist. A spoon for espresso is not used for stirring sugar, but for stirring cream (espresso foam).
Another thing, says the barista, is Slow coffee (coffee not prepared in a coffee machine), unlike its classic predecessors, it is drunk without haste. Its name speaks for itself. Before taking the first sip, you should let the drink “breathe” a little. When saturated with oxygen, coffee begins to reveal its flavor potential. After the first sips, let the coffee sit for 5-10 minutes, it will become much brighter. This coffee, like any other additives, does not require sugar.
