Carmine Morgese (Italy): "There are very hospitable people in Turkmenistan"

Today, in the Yyldiz Hotel in Ashgabat, two representatives of the Italian Federation of Chefs Carmine Morgese and Luca Di Giovanni held a master class on cooking real and simple Italian dishes in the best gastronomic traditions under the brand name "Made in Italy". After completing the master class, chef Carmine Morgese gave an exclusive interview to Turkmenportal.

Chef Carmine Morgese was born in Castellaneta (Taranto Province, Italy). He practically grew up in a bakery that belonged to his parents. When he was 13 years old, he began working in the kitchen during the summer holidays. Then he decided that he would go to a culinary school and in the future open his own restaurant. After five years of study at the Istituto Professionale Alberghiero, he worked in many areas of Italy. In 2010, Chef Carmine Morgese moved to Turkey and worked in Istanbul, Bodrum and Antalya. In 2018, together with his wife, he opened his own restaurant on the coast of the Aegean Sea.

– Mr. Carmine Morgese , which restaurant do you represent?

– My restaurant "Rosole Ristorante Italiano" is located in the vicinity of Izmir (Turkey). We are engaged in classic Italian cuisine – pasta, homemade pasta and homemade bread.

–  For two days you held a master class in the city of Mary, today in Ashgabat. How were you received in Turkmenistan?

–  We were very well received. There are very hospitable people in Turkmenistan. The restaurant kitchen staff in Mary helped us very well and showed great interest in Italian cuisine.

– What dishes did you cook today in Ashgabat?

– Today I prepared dishes called parmigiano and melanzano. This eggplant casserole is a very common dish in Italy as an appetizer. We also cooked Milanese risotto. At the same time, we tried to explain exactly the cooking technique, which differs from pilaf. Today there were also beef rolls with onions, this is an example of a simple kitchen, not sophisticated. And for dessert there was beignet – baked, which can be found everywhere in Italy. In today's workshop, we showed dishes that are basic, classic for Italian cuisine.
